First, we will start by making a statement that Southern cooks know how to cook some of the most delicious meals you will ever find. Often times they grow their own vegetables and prepare them like only a Southern cook could do.
Below we have some "old timey" recipes that you are sure to enjoy. You will see that the ingredients in these recipes are ingredients that you already have on hand. All of these recipes are southern favorites. It is our hope that you will find pleasure in preparing and enjoying these very tasty dishes.
Collard Greens: Pick young green leaves, remove stems & wash & put in pot with about 1 1/2 qts. water & ham hock. Salt to taste & add 1/2 cup shortening. Cook for 2 hrs. until tender. Remove greens from liquid. Take 2 knives & cut very fine. Serve with ham hock & corn bread.
Potato Patties: 5 large potatoes peeled & diced. Cover with water & boil until tender. Drain & mash real well. Add 1 onion (diced fine), 1 tsp. salt, 1/4 tsp. black pepper, 1/2 cup flour & 1 egg. Roll into patties or drop by spoonfuls into deep, hot oil. Fry golden brown. Cold mashed potatoes may be used.
Southern Fried Chicken: 2 or 2 1/2 lb. chicken for frying, cut into pieces. Wash thoroughly & drain. Sprinkle each piece with salt & pepper, then roll in flour. Fry in deep oil until completely cooked.
Pecan Pie: Beat 3 eggs lightly & add 1 cup dark corn syrup, 1 cup sugar, 1/8 tsp. salt, 1/2 tsp vanilla. After mixed well, add 1 cup chopped pecans. Pour into pie shell & bake in a slow oven at 300 degrees for 1 hour or until set.
